Iron Fortified Hibiscus Beverage: Potential Role of Liposomes

About

My thesis is focused on the iron fortification of a commonly consumed beverage in sub-Saharan Africa, the Hibiscus sabdariffa (hibiscus) beverage. To enhance iron bioaccessibility and prevent the unwanted sensory changes imparted by iron fortificants, liposomal encapsulation technology was employed.
