Strategic R&D collaborations and sponsored research with industry partners in the food bioactives, plant-based and alternative protein sectors. Also looking to engage with commercial partners interested in upcycling food processing by-products.
About
Dominic Agyei is the Course Director for the Master of Food Science and Agribusiness at Monash University. His research bridges fundamental chemistry and bioprocess engineering to investigate functional food compounds for health promotion and sustainable nutrition. His laboratory focuses on green biocatalysis, enzyme-mediated transformation, and the structural optimization of alternative proteins (plant- and insect-based matrices). By coupling in silico discovery and bioinformatics with in vitro and in vivo validation models, his group accelerates the discovery and upcycling of agricultural by-products into high-value functional ingredients.
