My group studies processing and bioprocessing of plant polysaccharides: enzymatic crosslinking, glycoengineering, hydrogel formation/regeneration, and interfacial compatibilization. With rheology and X‑ray/neutron methods, we map multiscale structure–function for food systems, dietary fiber carriers and sustainable biobased materials.
