My work spans plant molecular biology and food systems: transcriptomics of carbohydrate biosynthesis in starchy crops; postharvest and food microbiology; starch structure-function; and discovery of plant-derived bioactives using tissue culture, phytochemical profiling, in silico and preclinical testing.
