Controllable construction of protein-based hollow particles and their stabilized emulsions for co-encapsulation of bioactive components
About
Structural design of carriers plays a crucial role in enabling functional customization, especially for co-encapsulation. In this project, protein hollow particles are fabricated using template methods. Particle surface is modified by coating technology. Then, a complex oil system is used as the oil phase. Particle wettability, interfacial adsorption and assembling behavior are investigated to contruct oil-in-water emulsions stabilized by hollow particles. Finally, location and partition of bioactive components will be regulated for their simultaneous encapsulation and protection in emulsions.
