I completed my PhD in chemistry in 2016 before spending 1.5 years in dairy processing (my "cheese" sabbatical). Since then, I have been involved in myriad bio-based innovation projects exploring potential applications of seaweed in food (functional and nutritional), animal (methane reduction and nutritional), and plant (fertilizers and biostimulants). In December 2024, my consulting firm (Spoitz Enterprises) was acquired by Marine Biologics and I took the role of Chief Scientific Officer.
