Overview

Post-harvest spoilage caused by microbial organisms leads to significant losses of fruits and vegetables across the supply chain. Wintermute Biomedical has developed GS-2, a novel, patented antimicrobial ammonium carboxylate salt formed by combining a fatty acid with an amino acid. Both components are food grade, commonly found in the human diet, and recognized by the FDA as Generally Recognized As Safe and Effective (GRASE). GS-2 is water soluble, food safe, and provides broad-spectrum antimicrobial activity against viruses, bacteria, and fungi. Once dried on a surface, it forms an even, long-lasting coating that continues to protect produce during storage and transport. The technology offers produce growers, packers, and distributors a safer alternative to conventional chemical treatments for reducing spoilage and extending shelf life.

Technology readiness level

GS-2 has been extensively characterized at the molecular level and validated for antimicrobial efficacy in Wintermute Biomedical's laboratory as well as nine independent research and commercial laboratories. Animal safety studies have been completed, and the product is already in active commercial use in non-food industries. A USDA-funded study with the International Fresh Produce Association (IFPA) is underway to evaluate GS-2 as a coating for fruit packaging systems. The proposed next phase of validation includes in-vitro determination of minimum inhibitory, bactericidal, and fungicidal concentrations against key produce pathogens such as Xanthomonas campestris, Erwinia carotovora, and Rhizopus species, followed by controlled spray testing on deliberately infected apples, tomatoes, potatoes, and lettuce. Additional field-style testing will assess oxidation and spoilage reduction on exposed fruit, with full statistical analysis and reporting. The technology is positioned at an advanced stage of development, moving from proven laboratory and industrial efficacy toward targeted agricultural validation and commercial deployment in the fresh produce sector.
