EverSweet® is a zero-calorie stevia sweetener produced via precision fermentation, delivering the sweetest and cleanest-tasting steviol glycosides (Reb M and Reb D) without the bitterness associated with conventional stevia leaf extraction.

Overview

EverSweet® is produced through precision fermentation by Avansya, a joint venture between Cargill and dsm-firmenich. Engineered Saccharomyces cerevisiae yeast produces Reb M and Reb D — compounds that occur naturally in the stevia leaf but only in trace amounts. The fermentation route delivers a sugar-like sweetness profile free of the metallic or licorice off-notes common in earlier stevia products. An ISO 14040/44 panel-reviewed lifecycle analysis shows 96% less land use and 97% less water consumption compared to stevia leaf-based production. EverSweet is approved for use in both US (FDA GRAS) and EU markets.
