Innovative packaging films with enhanced oxygen and water vapor barriers extend the shelf life of protein-based foods by preventing oxidation and microbial growth. Extends dried meat product freshness up to 113 days with potential for 150-day shelf life.

Overview

The innovative barrier packaging developed by the Council for Scientific and Industrial Research focuses on extending the shelf life of protein-based foods, particularly dried meat products. Utilizing enhanced oxygen and water vapor barrier films, these packaging solutions prevent oxidation and inhibit microbial growth. This technology significantly extends the freshness of products like beef wors, a protein-rich snack, up to 113 days, with potential for a 150-day shelf life. The development aims to meet consumer demands for longer-lasting, fresh-looking food products while maintaining nutritional quality.

Technical specifications

Key features:

  • Enhanced oxygen barrier properties prevent oxidation of deoxymyoglobin to maintain fresh appearance.
  • Superior water vapor barriers inhibit the growth of molds, yeast, and spoilage organisms.
  • Designed for vacuum packing protein-based foods to extend shelf life effectively.
  • Applicable for various protein-rich foods, ensuring a broad market reach.
Technology readiness level

This packaging technology is at Technology Readiness Level 5, indicating it has been tested in relevant environments with successful results. Further validation is planned to achieve a 150-day shelf life through detailed material production and shelf life studies. Ongoing efforts focus on sustainability and regulatory compliance to prepare for market trials and eventual commercialization.

About Council for Scientific and Industrial Research

The Council for Scientific and Industrial Research (CSIR) is South Africa’s national applied research organization, operating multi-site campuses with a mission-driven, contract research model that serves government and industry. Industry engagement centers on co-located laboratories, accredited testing, and pilot-scale platforms that help companies de-risk scale-up and validate compliance. Prototyping workshops and demonstration testbeds support rapid design–build–test cycles, and on-campus collaboration spaces enable supplier development. Research is backed by South Africa’s public research funding and competitive industry contracts, with added support from international development and research programs. A dedicated technology transfer office manages IP, licensing, and spinout formation, with streamlined pathways for NDAs and facility access.
