An AI-driven framework predicts food product shelf life, optimizing formulation and packaging without lengthy tests. Applicable to dairy, beverages, and functional foods, it accelerates development and ensures regulatory compliance.

Overview

The proposed solution is an AI-driven framework designed to predict and extend the shelf life of food products. By leveraging machine learning, this technology aims to reduce dependency on traditional long-term and accelerated stability tests, which are often costly and time-consuming. The framework offers significant advancements by providing insights into optimal formulations, packaging, processing, and storage strategies. This approach can be applied across various food categories such as dairy, beverages, and functional foods, expediting product development and aiding regulatory compliance.

Technical specifications

Key features:

  • AI-powered predictions: Utilizes machine learning models trained on extensive experimental data, including short-term and accelerated tests, to predict product stability.
  • Formulation optimization: Capable of screening and optimizing formulations by predicting stability outcomes for new formulations without the need for extensive physical testing.
  • Broad applicability: Adaptable to different food products and conditions, allowing for comprehensive stability predictions across various formulations and storage environments.
Technology readiness level

This technology is currently at TRL 5, having been validated at the component and/or breadboard level in a relevant environment. The next steps involve further validation and optimization to transition towards commercial readiness.
