Deep learning visual system that detects optimal harvest periods in coffee beans with over 99% accuracy, enabling automation of postharvest bean selection to increase cup scores and double farmer revenue through automated sorting machinery.
This technology uses deep machine learning and computer vision to automatically detect the optimal harvest period for specialty coffee beans. By analyzing visual characteristics of coffee cherries, the system can classify ripeness levels with over 99% accuracy, significantly outperforming manual visual selection. The solution addresses a critical pain point in specialty coffee production: the labor-intensive and time-consuming process of selecting beans at optimal ripeness during postharvest operations. By automating this process, coffee farmers can improve cup quality scores and potentially double their product value.
The technology has completed initial validation with two coffee harvest trials achieving over 99% accuracy in optimal harvest color detection. Current development focuses on building the software for continuous band machine integration and adapting machinery to physically separate beans based on ripeness classification. The team is advancing from proof-of-concept toward a fully automated sorting system. Additional validation is needed to measure processing speed improvements once the automated machinery is operational.
Founded in 2023, Ex Seed is a deep-tech food startup from Bulgaria focusing on plant protein innovation. The founders combined chemical engineering expertise with a sustainability ethos to tackle waste from sunflower oil production – a significant industry in Eastern Europe. Ex Seed is part of an incubator program and is gaining attention for promoting sunflower protein as the next big plant protein.
