This research explores using alkyl phthalides from celery essential oil to enhance saltiness perception, potentially reducing sodium content in foods through odor-induced saltiness enhancement (OISE).

Overview

This innovative solution leverages alkyl phthalides derived from celery essential oil to enhance the perception of saltiness in food products. The approach, known as odor-induced saltiness enhancement (OISE), utilizes the associative power of specific volatiles to intensify the sensation of saltiness, allowing for reduced sodium content without compromising taste. This method could be particularly beneficial in developing lower-sodium food options that still satisfy consumer taste preferences.

Technical specifications

Alkyl phthalides, such as 3-n-butylphthalide, sedanenolide, and sedanolide, are key volatiles extracted from celery (Apium graveolens) that contribute to this effect. The research focuses on the interaction between these volatiles and different salt concentrations within various food matrices. Sensory profiling and consumer testing will be conducted to evaluate the effectiveness of this method and its applicability across diverse food products. This approach offers a natural and health-oriented solution to sodium reduction challenges in the food industry.

Technology readiness level

The current technology readiness level is 2. The concept has been formulated and is in the early stages of experimental validation. Future studies will involve sensory profiling and consumer tests to assess the impact of alkyl phthalides on saltiness perception in different food matrices. Partnerships are sought to support further development and validation.
