Research collaboration to develop astaxanthin-enriched carbonated beverages using bioactive compounds derived from Haematococcus pluvialis microalgae, leveraging its antioxidant properties for functional beverage applications.

Overview

This research initiative explores the production and application of astaxanthin, a powerful xanthophyll pigment derived from the microalgae Haematococcus pluvialis, in carbonated beverages. Astaxanthin is recognized as a "super vitamin E" due to its antioxidant activity that is reported to be 500-fold higher than other carotenoids such as β-carotene, lutein, and zeaxanthin. The project aims to evaluate how this natural bioactive compound can be incorporated into carbonated beverages to deliver enhanced nutritional and functional benefits.

The research addresses a growing consumer demand for functional beverages that offer health benefits beyond basic hydration. By leveraging microalgae-derived astaxanthin, beverage manufacturers can potentially develop products with superior antioxidant properties and appealing reddish-salmon coloration.

Technical specifications

Key research focus areas:

  • Production of astaxanthin from Haematococcus pluvialis microalgae cultivation
  • Assessment of astaxanthin stability across varying pH values in beverage formulations
  • Evaluation of storage temperature effects on astaxanthin retention
  • Optimization of storage period conditions to maintain bioactive properties
  • Consumer acceptance testing at different astaxanthin concentration levels
  • Investigation of packaging material compatibility with astaxanthin-enriched beverages

Prior validation findings:

Previous cookie formulation studies demonstrated that astaxanthin increased total phenolic content, enhanced DPPH radical scavenging activity, decreased lightness, and shifted color profiles toward red with reduced yellowness, confirming its functional potential in food applications.

Technology readiness level

This research is at an early-to-mid stage of development. The team has established proof-of-concept through cookie formulation studies and is now planning a one-year validation program focused on carbonated beverage applications. The research group is actively seeking partnerships to support beverage component sourcing, physico-chemical analysis equipment, and funding for key personnel. The work is being conducted at Cairo University, which offers co-located laboratories and shared core facilities for industry collaboration.
