Terraferma offers a sustainable, animal-free whitener built on reflectin - a squid- and cuttlefish-derived protein that scatters visible light through disordered sub-micron granules. Produced in food-grade yeast using the proprietary AI-guided CATTAGA platform, the particles are engineered above 100 nm for both surface coating and in-matrix mass whitening, delivering TiO₂-like opacity without metal oxides.

Overview

Terraferma is developing a protein-based whitener derived from reflectin, the high-refractive-index protein responsible for the bright white appearance of squid and cuttlefish leucophores. In nature, reflectin self-assembles into disordered sub-micron granules that scatter visible light broadly and incoherently, producing whiteness and opacity through the same Mie-scattering physics as titanium dioxide (TiO₂), but without any metal oxide content.

This whitener is produced by precision fermentation in food-grade yeast, with no animal-derived inputs, and is formulated into particles engineered above 100 nm to remain outside nanomaterial definitions. The material is designed for both surface coating and in-matrix mass whitening applications, offering formulators a sustainable, organic alternative to mineral- and petrochemical-based whitening agents.

Technical specifications
  • Reflectin protein core: the only known protein evolved specifically to scatter white light, providing a literature-backed physical rationale rather than a repurposed generic protein.
  • Mie-scattering mechanism: disordered, high-refractive-index granules scatter all visible wavelengths incoherently, mimicking the optical behavior of TiO₂ without metal oxides.
  • Particle engineering: particles are sized above 100 nm and tuned for peak visible-light scattering, with adjustable size, porosity, and void structure to raise scattering efficiency and lower required dosage.
  • AI-guided fermentation: the proprietary CATTAGA platform uses machine learning and synthetic biology to design and test microbial strains in silico, directly targeting reflectin's historically low expression yields.
  • Food-grade pathway: produced in food-grade yeast with an animal-free process, supporting a pathway toward GRAS status.
  • Application flexibility: suitable for surface coatings and in-matrix mass whitening, with ongoing evaluation of pH, texture, sensory neutrality, and process and thermal stability.
Technology readiness level

The technology is currently at an early-to-mid development stage. A staged validation plan is underway, beginning with a feasibility proof of concept (~3–6 months) that includes expression and purification of reflectin, particle formation and characterization, and benchmarking against a TiO₂ control in a model matrix to generate go/no-go data on scattering performance and loading. Subsequent phases (~12–24 months) will optimize particle structure, test across representative matrices, and assess stability and sensory properties, followed by scale-up of production, purification refinement, and advancement toward food-grade GRAS status. Milestones and matrix selection are defined jointly with development partners.

About Terraferma

Terraferma is an AI-biomanufacturing company that utilizes machine learning and synthetic biology to optimize protein production through precision fermentation. The company has developed a proprietary AI-powered platform called CATTAGA, which allows for the rapid, in-silico design and testing of microbial strains. By leveraging this technology, Terraferma aims to create high-yielding microbes capable of producing animal-identical proteins at a commercially viable scale, significantly reducing the economic and environmental costs typically associated with traditional animal-sourced proteins.

This approach addresses critical challenges in global food systems, including rising protein costs, greenhouse gas emissions, and the environmental impact of livestock farming. By making the precision fermentation of animal proteins cost-effective, Terraferma provides sustainable alternatives for various markets, beginning with the pet food industry through its flagship brand, Ten Lives. The company's efforts are supported by various scientific grants, including awards from the National Science Foundation, and it maintains research and operations at facilities in San Francisco. Their work focuses on delivering sustainable nutrition while maintaining product quality and ethical standards for consumers and their pets.
