Overview

This solution offers a groundbreaking protein delivery platform for ready-to-drink (RTD) beverages, utilizing transparent protein-biopolymer nano-complexes. These complexes are engineered to remain clear and stable in neutral-pH beverages, overcoming common challenges like protein haze and off-flavours caused by heat-induced unfolding and sulphur release. The technology supports high protein loading (≥5%) in still or carbonated beverages, ensuring they remain clear and sensorially appealing post-UHT processing, even at neutral or low-acid pH levels.

Technical specifications

The core of this technology lies in the complexation of food-grade proteins from various sources (dairy, plant, or fermentation-derived) with selected soluble polysaccharides and dietary fibers. These components are structured using high-pressure microfluidization, forming sterically stabilized, optically clear nano-complexes. This process prevents heat-induced aggregation and maintains protein solubility and transparency. The nano-complexes are designed for scalability using Generally Recognized As Safe (GRAS) ingredients and can be integrated with existing beverage production processes.

Technology readiness level

Currently at Technology Readiness Level 3, this solution is in the experimental proof of concept stage. The proposal outlines a detailed validation and scale-up plan, including screening of ingredients, optimization of nano-complex formation, RTD prototype testing, and pilot-scale production aimed at commercial readiness within two years.
