Developing a cocoa butter equivalent (CBE) using POP-, POS-, and SOS-rich fats produced through enzymatic synthesis and fractionation. This CBE is fully compatible with cocoa butter, ideal for use in chocolates and confectionery products.

Overview

This innovative research focuses on creating a cocoa butter equivalent (CBE) by blending fats rich in specific triacylglycerols: POP, POS, and SOS. These fats are synthesized and fractionated using lipase-catalyzed reactions, resulting in a CBE that mirrors the physicochemical properties of natural cocoa butter. The CBE offers a sustainable and cost-effective alternative for use in chocolates and other confectionery products without compromising quality.

Technical specifications
  • POP-rich fat: Produced via double-step fractionation of palm oil to achieve 75% purity.
  • POS- and SOS-rich fats: Created through two-step enzymatic interesterification and fractionation, reaching 90% purity.
  • Blend formulation: Fats are combined in specific ratios to mimic cocoa butter's crystallization, melting profiles, and polymorphism.
  • Validation tests: Includes crystallization and melting behavior analysis, solid fat content, slip melting point, and compatibility with cocoa butter.
Technology readiness level

Currently, the technology is at TRL 4, indicating that it has been validated in a laboratory environment. Ongoing research includes optimizing the production of POS-rich fat and testing the CBE in chocolate formulations to further assess performance and compatibility.

About Silpakorn University

Silpakorn University is a multi-campus comprehensive autonomous public university in Thailand with a creative, practice-oriented character. Campuses in Bangkok, Nakhon Pathom, Phetchaburi, and nearby urban areas place academic and technical capabilities close to varied regional economies. A central research administration office coordinates funding, ethics, intellectual property, research information, and pathways for translating results into use by industry and communities. Engineering and industrial technology provision was established in response to industrial expansion in Thailand’s western region, while the university offers academic services and collaboration for external organizations. Research is supported through competitive national funding, including Thailand’s Ministry of Higher Education, Science, Research and Innovation and the National Research Council of Thailand, alongside institutional and international sources. Technology-transfer functions support commercialization and entrepreneurship.
