University

A water-based colloidal silica (and aluminosilica) reagent designed to adsorb natural macromolecular colloids that cause turbidity in fruit juices, wines, and other beverages. It offers an alternative to bentonite treatment, enabling purification and stabilization of beverages such as juices and wines, with planned validation in coconut water.

Overview

This solution is a water-based colloidal silica reagent (with optional aluminosilica variants) developed for the purification and stabilization of fruit beverages, including juices, wines, and musts. The product targets the macromolecular colloids of natural origin that form during production and storage and that cause haze, turbidity, and destabilization in finished beverages. By adsorbing these colloidal species, the reagent clarifies the beverage and improves its long-term stability. It is positioned as a modern alternative to traditional bentonite-based fining, particularly for high-quality wines and fruit-based drinks.

Technical specifications

Composition and form:

  • Suspension of highly dispersed silicon dioxide (colloidal silica) in water, with optional aluminosilica grades
  • Can be modified with coagulants and flocculants for combined use during clarification

Function and mechanism:

  • Acts as an adsorbent that binds natural macromolecular colloids responsible for turbidity
  • Supports both purification (removal of haze-forming substances) and stabilization (prevention of post-bottling haze) of fruit beverages
  • Applicable to musts of different grape varieties, fruit juices, and other food beverages

Intended applications:

  • Wine must clarification as a bentonite substitute
  • Fruit juice purification and stabilization
  • Other food beverages requiring colloidal stability
Technology readiness level

The reagent has been formulated and is undergoing staged validation. Initial laboratory testing is planned on customer-supplied coconut water samples, followed by on-site trials at the producer's facility using the researcher's own adsorbent samples. A final in-person consultation stage is planned to resolve operational questions. The technology is at an early-to-mid stage of applied validation, suitable for pilot-scale collaboration with beverage producers interested in bentonite-free clarification.
