Innovative encapsulation technique using gelatin and Triumfetta cordifolia gum to enhance probiotic viability and protect against acidic conditions. Ideal for food and beverage applications.
This innovative encapsulation technology leverages a combination of gelatin and Triumfetta cordifolia gum to significantly enhance the viability of probiotics in acidic conditions. The use of complex coacervation and a double emulsification technique (Water/Oil/Water) ensures that probiotics remain viable when incorporated into various food and beverage systems. This solution is particularly beneficial for maintaining probiotic efficacy in products such as acidic beverages, where traditional probiotic strains may struggle to survive.
This technology is currently at TRL 4, indicating that it has been validated in laboratory conditions. Further development and testing are ongoing to refine the encapsulation process and confirm its efficacy in commercial applications.
