This research explores the use of enzymes and additives to strengthen the gluten network in pasta, aiming to maintain its al dente texture in shelf-stable products. Key enzymes include transglutaminase, glucose oxidase, and phospholipase, with additives like ascorbic acid.
This innovative research initiative aims to enhance the al dente texture of shelf-stable pasta using a combination of enzymes and additives. By strengthening the gluten network in flour dough during pasta processing, this solution seeks to maintain the desired texture even after long storage periods. The approach leverages enzymes such as transglutaminase, glucose oxidase, and phospholipase, as well as additives like ascorbic acid, azodicarbonamide, and diacetyl tartaric acid esters of mono- and diglycerides to achieve optimal results.
