A food processing technology that uses a spinning cone column to strip undesirable volatile flavor compounds from coconut water without diluting the product or losing sugars and electrolytes. Validated through sensory panels and GC-MS instrumental analysis, this approach delivers a neutral-tasting coconut water suitable for blended beverage and food applications.
This technology addresses a key challenge in the coconut water industry: removing undesirable natural flavors to produce a neutral-tasting base product. Using a Flavourtech spinning cone column, volatile aroma compounds are stripped from coconut water using steam, yielding a flavor-neutral product without the need for chemical additives, dilution, or loss of beneficial components such as sugars and electrolytes. The result is a versatile ingredient platform for beverage formulators and food manufacturers seeking a clean-tasting coconut water base.
The technology is currently at a pilot validation stage. The spinning cone column and all supporting analytical equipment are co-located at The Flavour Centre at The University of Reading, enabling integrated processing and analysis. Initial characterization of NFC coconut water has been completed, including SPME extraction with GC-MS analysis and sugar profiling by ion chromatography. Next-phase validation will involve experimental design to optimize the stripping process, followed by combined sensory and instrumental assessment to quantify residual flavor and confirm retention of sugars and minerals. The approach is ready for collaborative pilot trials with industry partners interested in flavor-neutral coconut water product development.
