University

Innovative edible biopolymer coatings designed to extend the shelf life of fresh and fresh-cut fruits by reducing spoilage and waste. These coatings utilize natural ingredients to provide antimicrobial and antioxidant benefits, aiming to replace synthetic fungicides.

Overview

Our innovative edible biopolymer coatings (ECs) are formulated to extend the postharvest life of fresh and fresh-cut fruits, such as berries, grapes, apple slices, and clementine pieces. By reducing gas and water exchange, these coatings help to maintain the freshness and quality of fruits. The ECs incorporate functional ingredients like antimicrobial and antioxidant agents to minimize spoilage and ensure food safety, while also reducing the environmental impact by replacing synthetic fungicides.

Technical specifications

Key features:

  • Composite Matrix: Made from a combination of hydrocolloids (polysaccharides, proteins, starches) and lipids (natural waxes, fatty acids) to create a barrier against gas and moisture.
  • Functional Ingredients: Includes food-grade antimicrobial and antioxidant agents such as potassium sorbate, sodium benzoate, essential oils, and plant extracts.
  • Customization: Tailored to the specific needs of each fruit type to ensure optimum performance.
  • Environmental Impact: Designed to substitute synthetic fungicides, thus lowering the ecological footprint of postharvest treatments.
Technology readiness level

The technology is currently at TRL 5, indicating that the edible coatings have been formulated and tested in relevant environments. Further optimization and validation trials are ongoing to refine the formulations and enhance their effectiveness under commercial conditions.
