Company

Michroma's Red+ is a nature-identical food colorant from filamentous fungi, offering stability across pH levels and high-heat processes. It serves as a cost-effective, scalable alternative to synthetic dyes, validated at industrial scale and in pilot tests with major food brands.

Overview

Michroma has developed Red+, a fungal-derived, nature-identical food colorant designed to replace synthetic dyes like Red 40 and Red 3. Using precision fermentation of filamentous fungi and CRISPR-optimized metabolic pathways, Red+ maintains color stability from pH 3 to 9 and withstands pasteurization, extrusion, and high-heat cooking. This innovative solution meets the regulatory and consumer demands for clean-label products while performing on par with synthetic dyes.

Technical specifications
  • Precision fermentation: Utilizes filamentous fungi to produce stable, nature-identical colorants.
  • CRISPR optimization: Enhances pigment production through targeted metabolic pathway adjustments.
  • Color stability: Maintains vibrant colors across a wide pH range (3-9) and high-temperature processes.
  • Scalability: Validated production at industrial scale with multiple paid pilots in collaboration with major food brands.
  • Versatility: Capable of producing red, orange, and yellow colorants, covering 90% of the required color spectrum for food producers.
Technology readiness level

Red+ is at a technology readiness level of 6, indicating that it has been demonstrated in relevant environments. The technology is commercially viable and ready for industrial deployment, with ongoing efforts to optimize production and applications in anticipation of regulatory approval.
