High-pc phospholipid fractions for enhanced chocolate texture

Technology
In development
Company

This innovative solution uses high-phosphatidylcholine sunflower lecithin fractions to improve the texture of chocolate. It reduces viscosity, enhances particle dispersion, and stabilizes emulsions, resulting in smoother, more stable chocolate without altering flavor.

Overview

This solution leverages high-phosphatidylcholine (PC) phospholipid fractions extracted from sunflower lecithin to enhance chocolate texture. The fractions improve the structural integrity of chocolate by reducing viscosity, enhancing particle dispersion, and stabilizing emulsions. This results in a smoother, more stable product compatible with standard chocolate-making processes, such as tempering and molding, while preserving flavor and appearance.

Technical specifications

Key features:

  • High-PC phospholipid fractions, specifically 65% PC and 33% PE, isolated from sunflower lecithin.
  • Effective in reducing viscosity and improving particle dispersion in both milk and dark chocolate.
  • Enhances the crystalline fat network for better snap and firmness.
  • Compatible with existing chocolate production methods without altering sensory qualities.
  • Clean-label solution focused on texture and heat stability improvements.
Technology readiness level

This technology is currently at TRL 4, with successful lab-scale trials. Future validation phases include optimizing production parameters, conducting pilot-scale trials in industrial settings, evaluating shelf-life and sensory acceptance, and preparing for industrial demonstration.
