This innovative solution offers a natural and chemical-free substitute for partially hydrogenated vegetable oils (PHVO), using mango kernel stearin blended with palm oil fractions. This approach aims to improve the melting characteristics of the blend without the formation of detrimental trans-fats, which are known for their pro-inflammatory effects. The solution provides a healthier fat substitute that retains desirable physical properties for food applications.

Technical specifications

The development process involves fractionating mango kernel oil to obtain stearin, which is then blended with various palm oil fractions. This blend aims to optimize melting characteristics, enhancing its application in food products. The solution is designed to address oxidation issues seen in non-hydrogenated fats and eliminate the chemical processes that lead to trans-fat formation. Key evaluations include slip melting point, physicochemical properties, melting and crystallization behavior, and fatty acid and triglyceride composition. The substitute is tested against commercially available hydrogenated fats for comparison.

Technology readiness level

Currently at TRL 2, this technology is in the early stages of development, with ongoing optimization and validation processes. Future plans include extensive testing of physicochemical characteristics and application trials in food products, as well as health benefit evaluations using animal models.
