Innovative pasta formulation using resistant starches and insoluble dietary fiber to enhance texture and reduce hydration. This approach stabilizes dough against excess moisture, maintaining "al dente" quality, particularly in high moisture environments.
This innovative research focuses on the development of pasta doughs using a mix of resistant starches (RS) and insoluble dietary fiber (IDF) to enhance the texture and moisture resistance. The proposed formulation addresses the common issue of dough elasticity loss when stored in high moisture conditions, aiming to maintain the desired "al dente" texture. By incorporating RS, known for its high gelatinization temperature and dough-stabilizing properties, and IDF, which provides structuring benefits, this solution offers a promising alternative to traditional pasta formulations.
This technology is currently at TRL 4, indicating that it has been validated in a laboratory setting. Future steps involve further testing to evaluate dough performance over a 12-18 month period in real-world storage conditions, ensuring stability and quality retention.
Università della Calabria is a comprehensive public research university in southern Italy, anchored by a residential campus that concentrates teaching, research, and advanced instrumentation. Industry partners access co-located labs, pilot-scale facilities, and shared equipment through streamlined collaboration agreements and contract R&D. The university connects with regional SMEs and multinationals via internships, industry-sponsored theses, and applied research placements, and participates in European consortia that enable cross-border development. Research is supported by competitive funding from the European Commission and national ministries, along with regional development programs. A dedicated technology transfer office manages IP, licensing, and startup formation, complemented by entrepreneurship programs and spaces for prototyping and testing.
