A modular refining platform offering precise control over starch-based sweetener composition and functionality, supporting the production of glucose syrups, maltose-rich fractions, and low- to mid-DE ingredients tailored to specific applications.

Overview

The modular refining platform developed by the Saskatchewan Food Industry Development Centre is designed to produce tailored starch-based sweeteners with precise control over sugar composition and functionality. By integrating enzymatic liquefaction and saccharification with controlled dextrose equivalent (DE) targeting, the platform enables the production of glucose syrups, maltose-rich fractions, and low- to mid-DE ingredients. This flexibility supports the creation of sweeteners with specific sensory profiles and compatibility with modern food formulations such as high-protein and clean-label products.

Technical specifications

Key Features:

  • Enzymatic Liquefaction and Saccharification: Allows for controlled hydrolysis with precise DE targeting, enhancing sweetness, digestibility, and functional performance.
  • Multi-stage Filtration and Purification: Utilizes ultrafiltration (UF) to remove proteins, lipids, and color bodies, ensuring high-quality end products.
  • Diverse Product Formats: Capable of delivering final products as syrups or spray-dried powders.
  • Customizable Across Starch Sources: Supports flexibility in adapting to different starch inputs and desired sweetener profiles.
Technology readiness level

This platform is currently at Technology Readiness Level 5, having completed process optimization and initial scale-up phases. It is ready for further development and validation through existing pilot infrastructure, with plans for industrial deployment supported by techno-economic analysis and process optimization.
