E3Bioworks presents a natural preservative solution using essential oil and zinc conjugates to inhibit spoilage bacteria in food products. Effective against Gram-positive bacteria, it promises to extend shelf life for meats and condiments while maintaining sensory quality.

Overview

E3Bioworks has developed a novel preservative solution utilizing natural essential oil components conjugated with zinc to target spoilage-causing lactic acid bacteria in perishable food products. This innovative approach offers a food-grade, natural alternative to traditional preservatives, aiming to extend the shelf life of meats, sauces, condiments, and dressings. By focusing on plant-derived, edible metal conjugates, this solution addresses consumer demand for natural food preservation methods while potentially inhibiting spoilage bacteria such as Leuconostoc mesenteroides, Lactobacillus buchneri, and Lactobacillus plantarum.

Technical specifications

Our preliminary studies have demonstrated a significant 2-log reduction in Gram-positive bacteria like S. aureus within 10 minutes, showcasing broad antimicrobial efficacy. The ongoing research aims to optimize formulations for various food matrices and assess efficacy against specific lactic acid bacteria strains. Key features include:

  • Effective inhibition of spoilage bacteria
  • Compatibility with diverse pH and temperature conditions
  • Preservation of flavor, texture, and color in treated foods
  • Potential application in a variety of food products, including meat and condiments
Technology readiness level

Currently at TRL 3, the technology has shown promising results in initial tests. Future phases will focus on formulation optimization, targeted bacterial testing, and long-term stability assessments. Collaborative development and operational testing are planned to further validate and commercialize this innovative preservative solution.
