A research-driven initiative to develop a natural, sustainable sweetener from select Himalayan herbs as a healthier alternative to sugar and artificial sweeteners. The project combines phytochemical screening, sensory evaluation, and bioactive analysis to deliver novel flavor profiles with potential anti-diabetic and antioxidant health benefits.

Overview

This project aims to develop a natural sweetener derived from herbs sourced from the Himalayan regions of Himachal Pradesh and Uttarakhand. The goal is to create a sustainable, health-promoting alternative to traditional sugar and artificial sweeteners, with unique flavor profiles rooted in traditional medicinal knowledge. Himalayan herbs are known for bioactive properties such as antioxidant and anti-inflammatory effects, which may offer added health advantages over conventional sweeteners. The initiative responds to growing consumer demand for natural, culturally relevant, and eco-friendly sweetening options.

Technical specifications

Research and development approach:

  • Selection and sourcing of candidate herbs from Himalayan biodiversity hotspots
  • Cleaning, drying, and powder formation for standardized processing
  • Phytochemical analysis to identify sweetening compounds and bioactives
  • Chemical analysis to determine sweetness intensity and flavor profile characteristics
  • In-vitro analysis to evaluate biological activity and safety
  • In-vivo analysis to assess health impacts, including potential anti-diabetic effects
  • Bioactive compound analyses targeting antioxidant and anti-inflammatory properties
  • Sensory evaluations and consumer preference studies to validate taste perception and acceptability
  • Product formulation into usable sweetener formats
  • Storage stability testing to determine shelf life and quality retention
Technology readiness level

The project is in the early-stage research and validation phase. Initial herb selection, processing, and laboratory analyses are underway, with comprehensive phytochemical, in-vitro, and chemical characterization in progress. Future validation steps include in-vivo studies, sensory testing, product formulation, and storage stability assessment before any commercial readiness can be established.
