A natural antimicrobial solution using synergistic combinations of plant metabolites and antibacterial peptides to combat spoilage-causing fungi and bacteria. These GRAS-status bio-chemicals extend post-harvest shelf-life of fruits and vegetables, validated in beverage applications with proven double and triple synergistic antimicrobial action.

Overview

This technology offers a natural approach to extending the shelf-life of fruits and vegetables by leveraging carefully selected combinations of plant metabolites and antibacterial peptides. These natural compounds, when combined strategically, exhibit synergistic antimicrobial activity against the fungi and bacterial species responsible for post-harvest spoilage. The bio-chemicals used mostly hold GRAS (Generally Recognized As Safe) status or are produced by GRAS organisms, making them suitable for food applications. This solution addresses a critical challenge in the agricultural supply chain by reducing post-harvest losses while maintaining consumer acceptance through organoleptic compatibility.

Technical specifications

Core technology:

  • Synergistic combinations of natural plant metabolites and antibacterial peptides showing double and triple synergistic action against bacterial pathogens
  • Multimodal antimicrobial activity achieved through combinatorial assessment of weak individual antimicrobial compounds
  • Most compounds hold GRAS status or are produced by GRAS organisms, ensuring food safety compliance

Validation methodology:

  • Broth microdilution assays with defined bacterial pathogen cell suspensions in MH broth
  • Natural products prepared as 1:10-diluted DMSO stock, diluted with water, and emulsified by sonication
  • Growth assessment via optical density measurement at 600 nm after 12 hours
  • Determination of MIC (Minimum Inhibitory Concentration), MBC (Minimum Bactericidal Concentration), and FIC (Fractional Inhibitory Concentration) values
  • Mode of action elucidation using biosensors
  • Previously validated in beverage shelf-life extension with organoleptic testing

Proposed application methods:

  • Spray formulation for surface treatment
  • Dip solution for produce immersion
  • Testing against bacterial and fungal pathogens responsible for fruit and vegetable spoilage
Technology readiness level

The technology has reached an advanced validation stage for beverage applications, with demonstrated synergistic antimicrobial combinations and completed organoleptic testing. For the specific application to fruits and vegetables, the next phase involves testing efficacy of the synergistic combinations in spray or dip formats against relevant spoilage pathogens. This includes doping studies with different bacterial and fungal pathogens, post-harvest loss assessment in consultation with industry partners, and additional organoleptic studies to confirm consumer acceptance. The technology is positioned for collaborative validation and refinement toward commercial deployment in the fresh produce sector.
