A novel encapsulated nutraceutical combining cocoa polyphenols and Physalis peruviana extract designed to reduce the risk and complications of gestational diabetes. Delivered via 3D-printed functional food, the formulation leverages bioactive encapsulation to improve bioavailability, insulin sensitivity, and glycemic regulation during pregnancy.
Gestational diabetes is a growing health concern affecting pregnant women, with potential negative consequences for both mother and fetus. This research proposes an innovative nutraceutical formulation that combines cocoa polyphenols and Physalis peruviana extract, both recognized for their antioxidant, anti-inflammatory, and blood sugar-regulating properties. The product is designed as a functional food delivery system using 3D printing technology and advanced encapsulation methods to ensure optimal bioavailability of the bioactive compounds.
The solution targets a critical unmet need: safe, nutrition-based strategies to prevent or manage gestational diabetes. By integrating well-characterized natural bioactives into a stable, palatable, and precisely dosed food format, this nutraceutical offers a preventive approach that aligns with dietary recommendations during pregnancy.

Research capabilities:
The project is currently at an early-to-mid stage of development. Preliminary in vitro and animal data have been obtained demonstrating biological effects of cocoa polyphenols and Physalis peruviana extract on glucose metabolism and insulin resistance. Extraction, purification, and encapsulation methodologies have been established, and initial bioaccessibility studies have been completed.
Future validation steps include optimizing encapsulation conditions, finalizing the 3D printing process, conducting sensory evaluations, performing chemical stability analysis, and completing rigorous toxicity and safety assessments in cell, animal, and pregnancy-specific models. Ethical approval for human, animal, and cell studies will be obtained from Universidad Industrial de Santander before clinical translation. The technology is not yet ready for commercial deployment and requires further preclinical and clinical validation.
Universidad Industrial de Santander is a comprehensive public research university based in Bucaramanga, serving northeastern Colombia through regional campuses. Industry collaboration is anchored by the Guatiguará Technology Park in nearby Piedecuesta, which co‑locates 15,000 m² of UIS laboratories, shared core facilities, high‑performance computing, and 7,000 m² of space for corporate R&D units. The park sits near Ecopetrol’s Instituto Colombiano del Petróleo, connecting university researchers with the region’s energy sector. Research is supported by competitive funding from Colombia’s Ministry of Science, Technology and Innovation and by regional and international programs. A dedicated knowledge transfer office, part of WIPO’s TISC network, provides IP and licensing support for companies engaging with UIS labs.
