Innovative emulgel technology using oleogels and hydrocolloids aims to replace saturated fats in chocolate spreads, enhancing nutritional quality and sensory attributes while maintaining industrial scalability.
This innovative solution introduces emulgel technology to the confectionery industry, focusing on chocolate spreads. By structuring oleogels with hydrocolloids such as pectin, gelatin, or carboxymethyl cellulose, this approach aims to replace saturated fats, enhancing the nutritional profile without compromising sensory qualities. The resulting emulgels replicate the creamy texture and mouthfeel of traditional saturated fats, providing a clean-label alternative that supports industrial scalability.
Currently at TRL 2, the emulgel technology is undergoing development and preliminary validations. The research plan includes further optimization and evaluation phases to advance the readiness level, focusing on sensory attributes and shelf-life stability in real-world applications.
