Explore olive polyphenols as a natural antimicrobial agent for food preservation, offering an alternative to traditional preservatives while enhancing nutritional value and safety.

Overview

Olive polyphenols are emerging as a promising natural solution for food preservation due to their potent antimicrobial and antioxidant properties. These compounds, extracted from olives, have the potential to replace traditional synthetic preservatives, providing a food-safe, health-promoting alternative. This solution not only extends the shelf life of food products but also enriches them with beneficial nutrients, appealing to health-conscious consumers and expanding market reach.

Technical specifications

Our research has developed a method for the rapid and efficient extraction of food-grade olive polyphenols, particularly hydroxytyrosol, known for its antimicrobial and antioxidant effects. The laboratory's capabilities include testing the antimicrobial efficacy of these polyphenols against various microorganisms, including lactic acid bacteria and yeasts. Future validation steps involve upgrading the extraction process, conducting antibacterial activity tests over several months, and preparing for food registration with independent laboratory analysis.

Technology readiness level

Currently at Technology Readiness Level (TRL) 2, the research is in the early stages of development. Plans are in place to scale up the process and establish a pilot plant by December 2025, aiming to produce high-purity polyphenol extracts and advance to industrial trials.
