Pectin-based microencapsulation technology improves probiotic stability and delivery in low pH beverages such as fruit juices and sodas. By protecting probiotic strains during production and consumption, the approach aims to maintain viability through digestion and support delivery to the large intestines. The encapsulation process may also provide prebiotic benefits for additional gut health support.
This solution uses pectin to microencapsulate probiotics, providing enhanced stability in low pH beverages such as fruit juices and sodas. The encapsulation protects probiotic strains during beverage production and consumption, supporting their viability when they reach the large intestines. Beyond stability, the encapsulation process may offer prebiotic benefits, enhancing gut health further.
The technology involves dispersing probiotics in a pectin solution, followed by spray drying to form microspheres with pectin on the exterior and probiotics on the interior. This encapsulation leverages the inherent stability of pectin in low pH environments, making it suitable for acidic beverages. Encapsulation integrity is evaluated using Fourier Transform Infrared Spectroscopy (FTIR) and Scanning Electron Microscopy (SEM). The resulting product is intended for integration into low pH beverage formulations, with formulations and process parameters optimized through industry collaboration.
This technology is at TRL 4, with validation processes underway. The microencapsulation technique has been demonstrated in a laboratory setting, and ongoing efforts aim to further validate and refine the technology for commercial applications.
