Polysaccharide-based template oleogels are an innovative solution designed to enhance the texture of food products such as cakes and breads. By using food-grade polysaccharides as matrices, these oleogels provide high oil sorption and retention capacities, resulting in improved textural properties like chewing, springiness, cohesivity, and crunchiness. This technology offers a healthier alternative to traditional fat-based products, utilizing edible oils to create a stable and quality-enhancing ingredient for various culinary applications.

Technical specifications

The oleogels are produced using a template approach, which provides longer stability compared to traditional emulsion methods. Key features include:

  • High oil sorption and retention capacity

Technology readiness level

Currently at Technology Readiness Level (TRL) 4, the polysaccharide-based oleogels have undergone initial testing and validation. Future steps include further textural and sensory analysis of food products, formulation optimization, and cost evaluation for large-scale production. The anticipated timeframe for delivering optimized food products with these oleogels is between 3 to 10 months.
