PRIME-Meat offers a novel heat-triggered acidification platform for restructured meat, utilizing encapsulated food-grade acids to control pH during processing. This technology enhances texture and stability by preventing premature protein denaturation and optimizing thermal restructuring.

Overview

PRIME-Meat is an innovative solution for the meat processing industry, designed to enhance the quality and shelf stability of restructured meat products. This technology employs a unique heat-triggered acidification system where food-grade acid powders are encapsulated within an edible matrix. This matrix remains stable during initial processing stages and only becomes permeable during heating, allowing for a gradual release of acid. This controlled release mechanism prevents premature protein denaturation, reducing common issues such as chunkiness, oil-out, and water separation in the final product. The result is improved batter flowability and enhanced thermal restructuring, which can be further optimized with compatible binders and structuring aids.

Technical specifications

Key features:

  • Encapsulation of food-grade acids within edible, heat-responsive matrices
  • Delayed acid release during heating to control pH reduction
  • Prevention of premature protein interaction during batter preparation
  • Compatibility with food-grade binders to enhance water-holding and fat-binding
  • Applicability in restructured meat systems for improved texture and appearance

This platform is particularly beneficial for meat processors aiming to produce high-quality, shelf-stable products with enhanced texture and stability.

Technology readiness level

PRIME-Meat is currently at Technology Readiness Level 4. This indicates that the basic technological components have been integrated and tested in laboratory settings. Future development phases include formulation optimization and pilot-scale validation to assess manufacturability and commercial feasibility.
