In-line multi-frequency impedance sensor for rapid, objective assessment of viscosity, consistency, and flow behavior in semi-finished or finished gravy. Measures conductivity, permittivity, temperature, and frequency-dependent impedance in about 6.5 seconds. Multivariate models trained against Brookfield apparent viscosity aim to enable inline quality control and early deviation detection.
4T2 Sensors offers a patented in-line multi-frequency impedance sensor for rapid, objective assessment of viscosity, consistency, and flow behavior in semi-finished or finished gravy. The technology is designed to support manufacturing quality control by moving from at-line or bypass sampling to inline monitoring, enabling early detection of process or quality deviations. The sensing platform is already deployed in food and beverage manufacturing across four continents, and this application extends it to gravy rheology for production environments.
The sensor measures conductivity, permittivity, temperature, and frequency-dependent impedance, with a typical measurement time of about 6.5 seconds (t90). It is intended for in-line operation in products containing meat and gravy, including situations where complete gravy/meat separation is not practical.
Proposed development approach:
The technology is at the proof-of-concept stage for this specific application. Scientific plausibility is supported by prior studies showing that dielectric properties respond to starch concentration and gelatinisation, and that beef-in-gravy exhibits frequency- and temperature-dependent dielectric behavior. A 16-week proof-of-concept is planned to characterise, correlate, and validate predictive features, with cross-lab validation support from academic or national measurement laboratories. Successful validation is expected to position the sensor for inline manufacturing deployment.
