Innovative coatings using starches, pectin, and antioxidants to extend the shelf-life of fresh fruits and vegetables up to 30 days. Developed for application via dipping or spraying, these coatings are optimized for low-temperature storage.

Overview

The solution focuses on extending the shelf-life of fresh sliced fruits and vegetables through advanced coatings. These coatings, made from formulations of starches, pectin, and natural antioxidants like ascorbic acid, are designed to be applied by dipping or spraying. They enhance product preservation by creating a protective film that adheres to the food surface, effectively slowing down spoilage processes when stored under low temperatures.

Technical specifications

The coatings are developed using rheologically controlled film-forming suspensions. Key components include:

  • Base materials: Starches and pectin
  • Antioxidants: Ascorbic acid and other natural extracts
  • Application methods: Dipping and spraying
  • Preservation enhancements: Extends shelf-life up to 21-30 days for fruits and 15 days for sliced potatoes when stored in modified atmosphere or vacuum packaging

The coatings are optimized through rheological, microstructural, and contact angle measurement studies to ensure complete adherence and consistent thickness.

Technology readiness level

Currently at TRL 4, the technology has been validated in lab settings with unpublished data demonstrating efficacy in extending product shelf-life. Further development and validation efforts are underway, focusing on formulation optimization and application techniques. Collaboration with partners for funding and testing is sought to advance this technology.
