A scalable method to transform wheat gluten into a stable ingredient for liquid systems, enhancing dispersibility through enzymatic modification and process optimization. Applications include beverages and sauces with improved stability and sensory quality.

Overview

NIZO Food Research, in collaboration with the University of Twente, presents an innovative approach to transform wheat gluten into a functional ingredient for liquid systems. This scalable solution enhances gluten dispersibility and stability in applications such as beverages and ready-to-drink products. The technology leverages controlled enzymatic modification and optimized processing techniques to create suspension systems with tailored rheology and stability, ensuring a robust and industry-ready gluten-based ingredient.

Technical specifications

The solution utilizes controlled enzymatic modification to improve the water solubility and dispersibility of wheat gluten. Key process optimizations include mixing, homogenization, and heat treatment to achieve desired particle size and prevent aggregation. This process is validated through scale-up in a pilot plant capable of processing 100–10,000 L/h. The final ingredient system is tested for functionality, focusing on solubility, viscosity, and stability, with sensory evaluations to ensure acceptable taste and texture in real applications.

Technology readiness level

This technology is at TRL 6, having moved beyond laboratory feasibility to a pilot-scale demonstration, involving rigorous testing and validation in model liquid systems such as beverages and sauces. The development program includes phases of feasibility, process optimization, application validation, and pilot-scale demonstration over approximately 5 to 7 months.
