This innovative solution explores the potential of using starch and sucrose esters to create oleogels that replicate the functional and sensory properties of conventional fats. By utilizing food-grade materials, the oleogels are designed to be label-friendly and compatible with existing food processing standards. The approach involves creating a hydrogel from starch, which is then dehydrated into a porous cryogel scaffold to entrap edible oils. Additionally, sucrose esters are used to form crystalline networks or reverse-micellar emulsions, allowing for customizable texture and stability. This dual approach offers significant advantages in terms of industrial feasibility and sensory fidelity.

  • Starch Hydrogel to Oleogel: Starch is gelatinized under controlled conditions and dehydrated into cryogels that retain oils, with variations in starch type, gelatinization temperature, and homogenization speed allowing precise tuning of gel characteristics.
