Startup Thauma is developing optimized extraction techniques and sensory profile improvements for Thaumatin, a globally approved sweet protein 2000-3000 times sweeter than sugar. The project aims to make Thaumatin a cost-effective, scalable sugar alternative for beverage applications through enhanced yield, taste modulation, and protein engineering.
Startup Thauma is advancing the industrial production and sensory optimization of Thaumatin, a naturally derived sweet protein extracted from the arils of Thaumatococcus daniellii. Thaumatin is currently the only globally approved sweet protein and offers a safe, healthy, high-intensity alternative to sugar. Despite its strong market potential, two key challenges limit its widespread adoption: difficult extraction from polysaccharide-rich arils and sensory limitations including delayed sweetness onset and a lingering liquorice-like aftertaste at high concentrations. Startup Thauma is addressing both challenges through optimized extraction methods and protein engineering to align Thaumatin's taste profile closer to sugar, enabling broader sugar replacement in beverages.
Key research and development areas:
Strategic advantages:
The project is at an early-to-mid stage of development. A comprehensive literature review has confirmed Thaumatin's promise as a sugar reduction candidate due to its favorable organoleptic properties, solubility, and stability under acidic pH and thermal treatments. Because Thaumatin is already market-approved, integration pathways into beverage product lines are expected to be expedited. Short-term objectives focus on characterization, solubility assessment, quantification, and extraction method development. Mid-term goals center on protein engineering and variants research. Long-term plans involve computational protein design. The research hypothesis will be rigorously validated through ongoing global research collaborations.
