Innovative encapsulation method for thermally stable microcapsules, enabling targeted release of vitamins and probiotics in intestines. The technology is energy-efficient, scalable, and cost-effective, with applications in functional foods and supplements.

Overview

The proposed technology offers an advanced encapsulation method for creating thermally stable micronutrient microcapsules, designed for targeted release in the intestines. This innovative solution protects vitamins and functional compounds from environmental degradation during processing, ensuring they remain effective upon consumption. The encapsulation technique is based on the coacervation principle, utilizing an oil-in-water emulsion that is scalable, energy-efficient, and cost-effective. This technology is particularly suitable for incorporating probiotics, enhancing their stability and viability through the digestive process, making it ideal for functional foods and dietary supplements.

Technical specifications
  • Encapsulation method: Coacervation-based with oil-in-water (O/W) emulsion, extending to water-in-oil-in-water (W/O/W) systems for probiotics.
  • Core properties: Edible, odourless, colourless, and highly soluble in water.
  • Production benefits: Minimal use of heat, reducing energy consumption and CO2 emissions.
  • Stability: High thermal and pressure stability, maintaining integrity during pasteurization and sterilization.
  • Probiotic viability: Ensures probiotics remain viable through the digestive process.
Technology readiness level

The current technology readiness level is 4. The encapsulation method has been developed and initial prototypes have been created, demonstrating feasibility. Future validation includes scaling up to pilot production, pasteurization and sterilization testing, and digestive viability testing, projected to be completed in approximately six months.
