My research harnesses microorganisms and enzymes to improve products, processes, and drive innovation. We combine fundamental lab studies with pilot scale development of scalable, robust processes, addressing stability, efficiency, and product quality. Our EFBT lab offers a large collection of microorganisms, advanced infrastructure, and analytical tools to drive sustainable innovation (higher yields, lesss waste, renewable inputs).
Focus areas include bioreactor technology for biomass production (e.g. mycoproteins), enzymes and various metabolites; optimising fermentation processes for improved product quality and shelf-life; upcycling agri-food side streams; biofilm control (food, textile-care); natural antimicrobials; and tailored enzyme solutions for industrial applications.
