I am mainly looking for partners working on polymorphic structures and transitions of triglycerides and complex fats. This includes also to evaluate new, alternative lipid sources derived from microorganisms grown in controlled environments or lipids harvested from insects.
About
I have helped industry to investigate the phase behaviour of triglyceride blends and complex fats, clarifying (i) their cooling and melting profiles, (ii) the nanostructures of meta-stable and stable polymorphs, (iii) the solid fat content, (iv) the composition and function of the milk fat replacers, and (v) the miscibility of triglyceride blends with proteins.
In another field of lipid-self-assemblies research, I have worked on the rational design and optimization of lipid nanoparticles, potentially linking a lower water content with an increased therapeutic performance, i.e., I helped to evaluate the role of hydration of nanoparticles being applied in mRNA vaccines.
