The ISAPP (International Scientific Association for Probiotics and Prebiotics) defines postbiotics as a “preparation of inanimate microorganisms and/or their components that confers a health benefit on the host.” They can be composed of inactivated microbial cells and/or metabolites. The postbiotic does not have to be derived from a probiotic.
What we're looking for
Since postbiotics are an emerging area globally with few published science-based studies, PepsiCo is looking to develop or adapt existing methodologies and validation protocols to support the functional gut health claims of various postbiotics. We are looking to determine and validate if our plant-based fermentation produces known postbiotics that deliver gut health functional benefits. Specifically, gut health benefits related to increased digestibility and positive modulation of the microbiome. We are looking to develop postbiotics from plant-based fermentations, specifically oat, rice, bean, and potato-based fermentations, using organisms such as lactic acid bacteria, yeast, and/or potentially fungi to deliver benefits to gut health. PepsiCo will supply the plant-based fermented samples for evaluations for postbiotics through analytical assays and/or functional based in vitro models.

Screening methodologies to identify postbiotics that deliver gut health benefits focused on increased digestibility and support of “good” bacteria in the microbiome.
Either established or new component identification and screening methodologies for pre-validation, validation, and monitoring of postbiotic production during fermentation (inanimate cells, cellular structures, or metabolite).
Strategies to establish pre-clinical studies for postbiotic gut health functionality (increased digestibility and microbiome modulation) and functionality testing (analytical testing, in vitro models, etc.). The models used must be non-animal models.
Fermentation monitoring strategies to ensure batch to batch postbiotic production consistency during fermentation scale-up. Quick turnaround methods to ensure consistent postbiotic production from fermentation batch to batch.
Our must-have requirements are:
Development of postbiotic identification methods should take no longer than 8 months and be focused on analysis from oat, rice, bean, and potato-based fermentation. Samples will be provided by PepsiCo.
For pre-clinical studies, an adaptation of existing models should be applied to postbiotics produced from plant-based fermentations.
Postbiotic analytical production monitoring method(s) should be able to be applied for postbiotic production at commercial scale: The method should have quick turn-around, be easy to conduct in a commercial facility, and should not require highly specialized equipment to allow for the monitoring of postbiotic production consistency from fermentation batch to batch.
Our nice-to-have's are:
Development of postbiotic identification methods should take 4-6 months
Adaptation of currently available metabolite identification methods to analyze metabolites from plant-based fermentation.
Strong technical capabilities in developing and screening plant-based fermentations for gut health functional benefits.
What's out of scope:
Novel method/technology/model systems that will take 10+ months to validate.
