A bacteriocin-based antimicrobial solution for meat sterilization, extending shelf life while preserving sensory quality. Developed by BeeTechnology, this solution reduces processing intensity and supports sustainability by lowering energy demands.

Overview

BeeTechnology presents a novel bacteriocin-based antimicrobial solution that serves as a gentle sterilization method for meat products. This technology utilizes precision fermentation to produce bacteriocins from a GRAS-status microorganism. Designed as part of a hurdle strategy, it can be applied before or after mild thermal or physical sterilization to inhibit spore-forming pathogens. By preserving aroma, color, texture, and nutrition, this solution extends the shelf life of meat products without compromising their sensory qualities, even in low-moisture packaging.

Technical specifications
  • Bacteriocin Production: Utilizes precision fermentation for scalable bacteriocin production.
  • Application: Can be integrated into meat processing either pre- or post-sterilization.
  • Benefits: Reduces need for high heat, preserves product integrity, and extends shelf life.
  • Validation: Proven effective in pork and poultry, and adaptable to various meat matrices.
  • Sustainability: Lowers energy demands by reducing processing intensity.
Technology readiness level

This technology is currently at TRL 5, having undergone pilot-scale validation and regulatory safety data reviews. Further validation steps are planned, including production optimization, expanded antimicrobial assays, and pilot-scale processor collaborations, with full execution expected within 12–18 months.

About BeeTechnology

BeeTechnology is a Chilean biotechnology startup founded in 2016 that specializes in developing biological additives based on antimicrobial peptides to improve food safety and shelf life. Originally established to combat disease in honeybee colonies, the company evolved its technology into a solution known as FoodGuard, a colorless, odorless, and tasteless biosanitizer. This innovation is designed to be applied to protein products, such as chicken and pork, to control common bacterial pathogens like salmonella and E. coli without the use of artificial components. By offering a natural alternative to chemical preservatives, the company aims to reduce food waste and enhance safety standards throughout the supply chain.

The startup’s solution is highly relevant to producers looking for sustainable, organic methods to extend the shelf life of perishable items and comply with evolving environmental and food safety regulations. BeeTechnology has undergone various stages of development, including scaling production capacity and pilot testing with major food processors in Chile and international markets such as France. The company has secured support and recognition from organizations such as the Chilean Agricultural and Livestock Service (SAG) and international accelerators. With a focus on both animal and plant health, BeeTechnology is currently pursuing further international certifications, including potential FDA approval, to facilitate its growth and expansion into global markets.
