A biocontrol approach leveraging beneficial yeasts and lactic acid bacteria from cocoa fermentation to inhibit mycotoxin-producing fungi (Aspergillus and Penicillium) in cocoa beans, enhancing food safety during fermentation and drying stages.
Mycotoxin contamination, particularly ochratoxin A (OTA), poses a significant food safety risk in cocoa production. This research proposes a biological control strategy that uses beneficial microorganisms—yeasts and lactic acid bacteria (LAB) naturally present during cocoa fermentation—to inhibit the growth of mycotoxin-producing fungi such as Aspergillus and Penicillium species. By integrating these antagonistic microorganisms into the fermentation and drying processes, the solution aims to reduce fungal contamination without relying on chemical treatments, supporting safer cocoa bean production for chocolate manufacturers and improving compliance with international food safety standards.
Key features:
The research is in the early-to-mid experimental stage. Initial isolation and dual culture screening of antagonistic microorganisms have been defined, with planned validation through liquid fermentation tests and micro-fermentation trials. Future work includes molecular identification of fungal isolates, selection of the most effective biocontrol candidates, and optimization of application protocols during cocoa fermentation and drying. The approach is positioned for further development toward scalable application in cocoa processing operations.
AGROSAVIA is a Colombian decentralized public entity of mixed non-profit participation dedicated to agricultural science, technology, and innovation. The organization focuses on generating scientific knowledge and developing agricultural technology through research, technological adaptation, and the dissemination of technical expertise. Its operations are organized into specialized innovation networks, including cacao, fruits, vegetables, livestock, permanent crops, and roots and tubers. By bridging the gap between advanced research and practical application, AGROSAVIA develops improved crop varieties, such as biofortified beans and sugarcane, and establishes integrated management protocols to enhance agricultural productivity and sustainability.
These efforts are vital for Colombian agricultural producers, providing them with the tools and knowledge necessary to improve competitiveness, ensure sustainable natural resource management, and raise their quality of life. Through initiatives like field schools and the provision of technical assistance, the corporation facilitates the transfer of technology and information to small-scale farmers. By fostering collaboration between the public and private sectors, AGROSAVIA acts as a key driver for technical change in the national agricultural sector, helping producers modernize their practices and address challenges related to climate resilience and food security.
