A novel single-stage chocolate processing technology using cold plasma to induce form V cocoa butter crystals in 5–15 seconds, replacing traditional multi-stage tempering. Reduces processing time, energy, and labor while improving shelf life and flavor profile.
This solution introduces cold plasma as an innovative alternative to conventional chocolate tempering. Traditional tempering requires multiple controlled cooling and reheating stages to achieve the desired form V cocoa butter crystals, which give chocolate its characteristic gloss, snap, and shelf stability. The proposed cold plasma technique achieves the same crystalline outcome in a single step within 5–15 seconds, dramatically simplifying production. Laboratory results show treated chocolate exhibits a sharp melting point of 31–32°C, resists fat and sugar bloom for up to one year, and delivers a more pronounced cocoa flavor in milk and dark varieties.
The technology has been validated at TRL 5 on laboratory-scale 25-gram samples of white, dark, and milk chocolates, confirming exclusive form V crystal formation through DSC and sensory analysis. Future work targets pilot-scale validation, including determining whether plasma treatment is best applied in stirred tanks or to chocolate spread to a defined thickness in molds, and optimizing plasma parameters for each chocolate type. The planned pilot study is estimated to take one year and requires funding for project scholars and consumables.
