We have developed a fungal fermentation platform for converting food and agro-industrial side streams into food grade protein-rich fungal biomass. The process was scaled in laboratory conditions and a total DCW of 19.0 g/L was achieved, yielding 28% protein on a dry weight basis, the protein content can be improved drastically with the background data. The developed fungal biomass have applications as meat alternatives, feed, and multinutritional supplement, nutraceutical etc. The approach is not limited to one substrate. The underlying platform can be adapted to other agro-industrial residues and side streams depending on their composition, availability, and target application.
