Three trends in alternative protein solutions on Halo

Soy and pea are the base, and the rest is a fix. Six entries are isolates and textured proteins from soy, pea, fava and wheat, and six more exist only to correct what those proteins do to a product: bitterness and beany notes, dark pigment in a clear drink, the mouthfeel gap against dairy, and animal fat that melts the way animal fat does. The protein is solved; the eating is not.

Gelation is where the university work sits. Three entries from one program work on pulse protein gels: plasma bubbles in a purpose-built reactor for gelation and 3D printability, a transparent gel that melts and sets repeatedly across a pH range, and meat-like mechanical strength reached with no enzymes and no chemical reagents. All three are at TRL 4, against TRL 9 for every supplier on the page.
