A natural sweetener derived from date fruits (Phoenix dactylifera) formulated to a low pH range of 2–4 through lemon extract addition, offering a nutrient-rich alternative to white sugar for snacks, baked goods, and beverages without compromising sweetness.

Overview

This solution leverages date fruits, locally known as Dabino, as a natural, nutrient-dense sweetener for the food and beverage industry. Date fruits are processed into low-pH syrups and powders (pH 2–4) through the controlled addition of fresh lemon extract, preserving their natural sweetness while making them suitable for use in food formulations that require low acidity. The resulting sweetener is gluten-free, rich in vitamins, minerals, and antioxidants, and supports digestion, brain function, and heart health. It addresses the growing consumer demand for alternatives to refined white sugar, enabling food manufacturers to produce healthier snacks, treats, baked goods, and drinks with added nutritional benefits.

Technical specifications
  • Raw material: Date fruits (Phoenix dactylifera), sourced fresh or dried, with initial pH of 8.5 (fresh) and 6.5 (dried)
  • pH adjustment: Fresh lemon orange extract is added to reduce pH to a range of 2–4 without compromising sweetness
  • Product formats: Date syrup and date powder suitable for incorporation into food drinks, cookies, bread, healthy snacks, and pro-vitamin A nutritive beverages
  • Nutritional profile: Natural source of minerals, vitamins, and antioxidants; supports digestive health, immune function, and heart health
  • Gluten-free: Suitable for consumers seeking gluten-free food options
  • Functional benefits: Acts simultaneously as a sweetener and nutrient enhancer, reducing the need for separate fortification
Technology readiness level

The technology has been validated in a food product development laboratory, where date fruits have been successfully used for many years as a sweetener and nutrient enhancer in winning foods, healthy snacks, cookies, bread, and food drinks. Pro-vitamin A nutritive drinks produced using this date-based sweetener have already attracted high consumer patronage. Planned validation activities over a six-month period include sourcing and protocol development, processing of date powder and syrup, shelf-life testing, combination testing in dried food forms and drink syrups, substitution trials replacing white sugar in existing food processing protocols, and short-term shelf-life evaluation of formulated products. The technology is ready for pilot-scale trials and further commercialization partnerships.

About National Root Crops Research Institute

NRCRI is Nigeria’s federal institute dedicated to root and tuber crops, headquartered in Umudike, Abia State, and operating across multiple agro-ecologies via regional outstations. For industry, these sites enable ecological testing and on-farm validation, while extension and demonstration farms accelerate uptake with growers. Biotechnology, tissue-culture, and trait-profiling laboratories generate clean planting materials and support breeding; postharvest and product-development facilities back process optimization and equipment prototyping. The institute is funded by Nigeria’s federal government through the Agricultural Research Council of Nigeria, with additional competitive support from development partners. An Intellectual Property and Technology Transfer Office facilitates IP, licensing, and commercialization with processors and SMEs.
